Mini Marmalade Loaf Cakes

Check out this super simple baking recipe full of beautiful zesty orange flavour glazed with melted Seville Orange Marmalade

Makes 4 mini loaf cakes 


  • 200g caster sugar
  • 200g softened butter
  • 4eggs
  • 200g self-raising flour
  • 1 tsp baking powder
  • 3tbsp Wild & Fruitful's Seville Orange Marmalade. Plus extra for the glaze.


Preheat the oven to 180 degrees fan and grease and line 4 small loaf tins

Using an electric mixer beat together the butter and sugar until pale and fluffy.

Add the beaten eggs a little at a time, adding a teaspoon of flour after each addition to stop the batter splitting.

Sieve the flour and baking powder and carefully fold into the cake batter, using a metal spoon.

Next mix the marmalade through the cake batter and then spoon the mixture into the prepared tins and into the preheated oven.

Bake the cakes for 15-20 minutes or until well risen, golden brown and a skewer comes out of the centre clean.

Once baked remove from the oven and place onto a wire rack to cool. 

To make the glaze, gently melt 2 tablespoons of the marmalade in a small saucepan. Once fully melted, use a pastry brush to completely cover the tops of the cakes.

Leave to coll completely before slicing.
