Who said pigs in blankets were only for Christmas time? We spiced up traditional pigs in blankets with a glazed made from our delicious Wake Up Marmalade. Served on a bed of charred leeks .
Preheat the oven to 200 degrees fan.
For the pigs in blankets, cut the streaky bacon in half. Then using the edge of a knife push down along each piece bacon to make them longer and thinner. This will help to crisp up the bacon!
Next wrapped the thin halves of bacon around the sausages and place onto a non stick baking tray. Place in the oven for around 20 minutes, or until the bacon is nice and crispy.
While the pigs in blankets are cooking, start on the leeks. Cut the leeks in half lengthways and then dice into 1cm sized pieces. Place into a colander and wash thoroughly, then set aside to dry for a couple of minutes.
Meanwhile, place a frying pan on the stove with the butter. Once the butter starts to bubble add the chopped leeks and cook until nicely caramelised. Season with salt and pepper.
Melt the marmalade in small saucepan or gently in the microwave.
When the sausages are cooked through and the bacon is crispy, remove from the oven. Then using a pastry brush glaze the pigs in blankets with the marmalade.
Remove the leeks from the pan and put the plate. Place the pigs in blankets on top and serve immediately.
